Takeout photos show the wrong date because Google keeps the date taken in a separate JSON file, not in the photo. Add every Takeout ZIP to the Google Takeout Fixer, check the matches, and write the dates back inside the files in your browser.
To move Google Photos to iCloud with the right dates, export with Google Takeout, write the dates from Google's JSON into the files, then import the fixed folder into Photos on a Mac with iCloud Photos turned on. Google's direct transfer to iCloud is the alternative without a download.
Immich reads dates and GPS from inside each file, not from Google's Takeout JSON. Fix the Takeout first so the dates are in the files, then upload with the Immich CLI, which can turn folders into albums. immich-go is the command-line alternative that reads the JSON itself.
Google Takeout splits a large Google Photos export into several ZIP files numbered -001, -002 and so on. Choose ZIP and the largest size you can download reliably, download every part within about 7 days, and keep all parts together: a photo and its JSON can be in different ZIPs.
